I enjoy the traditions of Asian and Spanish food where many choices are on the table at one time to be shared by the diners, It’s a wonderful, diverse experience enjoyed in the moment,

I’ve come to detest the pompous “tasting menus” we now often find which serve as paeans to the chef, and are brought out in ceremonious stages over what seems like days, complete with vivid, inane descriptions: “This is left ventricle of elk raised about 12,000 feet, drizzled with a marrow of unearthed tyrannosaurus fetus, with sprigs of vegetables which leave no shadows.”

This turns dining into a boring, supercilious trudge through the chef’s résumé. It’s really a “wasting menu.”
